Just savoured a few raw Oysters from my local fish & chippery and really enjoyed them. There is something unique about an Oyster – they have qualities that aren’t common to any other type of seafood. I love them completely raw straight from the shell, with a squeeze of lemon juice and nothing else. There are a lot of complex flavours there, the most obvious being a slight salt water tang.
Admittedly they aren’t for everybody – many are turned off by the sight, texture or even the smell of them. But allowing yourself to take the plunge and trying them raw is something everybody should try. You only live once.
